I think that if you write explicitly the formula for the eigenvalues for varying stationary input (which means that the location of the fixed-point around which you do the linearization changes), then you should see the change of sign in the real part of the eigenvalues. This calculation was not explicitly done in the course so it's probably not essential. However, you should remember the general reasoning.
